Greek Salad

INGREDIENTS

  • 1 cucumber, sliced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 lb feta cheese, 1/2 inch diced
  • 1/4 Cup(s) kalamata olives, pitted
  • 2 cloves garlic
  • 1 Teaspoon(s) dried oregano
  • 1/4 Cup(s) white wine vinegar
  • 1/2 Cup(s) OMG! Extra Virgin Olive Oil with Meyer Lemon
  • 1/4 Cup(s) lemon juice
  • salt & pepper to taste

PREPARATION

  1. Step 1.
    Cut all veggies. Combine cucumber, cherry tomatoes, red onion, feta cheese and kalamata olives into a large bowl.
  2. Step 2.
    In a small bowl, whisk together white wine vinegar, lemon juice, OMG! Extra Virgin Olive Oil with Meyer Lemon, garlic and salt & pepper.
  3. Step 3.
    Pour small bowl mixture over veggies. Sit for 30 minutes for flavors to blend.

SERVE

Serve at room temperature.
