Baked Potatoes with Bacon, Cheddar and Chives

INGREDIENTS:

3 large russet potatoes

4 tbsp Butter

1/4 cup freshly chopped chives

1/4 cup sour cream

3/4 cup Cheddar Cheese, shredded

4 slices of cooked crispy bacon

1 tbsp OMG! Eureka Garlic Extra Virgin Olive Oil

Salt & Pepper to taste

Yields: 3 Servings

PREPARATION:

Preheat oven to 400°. Poke holes in the potatoes with a fork, then wrap in foil. Bake for 1 hour, until softened. Cut potatoes lengthwise and make a small pouch, put the excess potato in a bowl, then add butter, sour cream and chives. Add in 1/2 cup of Cheddar Cheese and 2 slices of bacon, set remaining Cheddar Cheese and bacon for topping.  Spoon filling into the potatoes and sprinkle Cheddar Cheese. Put in oven for 5 minutes. Top with scallion greens and bacon. Drizzle on OMG! Eureka Garlic Extra Virgin Olive Oil as a finishing oil.
