Lemon-Herb Roasted Salmon

Yield: 4 servings


1 lb wild caught salmon filet

1 tsp coarse kosher salt

½ cup panko bread crumbs

¼ cup OMG! Extra Virgin Olive Oil with Meyer Lemon

4 large cloves garlic, minced

½ cup fresh parsley, chopped

¼ cup fresh dill, chopped

1 tsp freshly cracked black pepper


  • Preheat the oven to 400°F. Place the salmon skin-side down on an oiled baking sheet or roasting pan. Remove all pin bones and pat dry. Sprinkle with salt.
  • In a small bowl, combine the panko, OMG! Extra Virgin Olive Oil with Meyer Lemon, garlic, parsley, dill, and pepper. Spread evenly over the salmon. Roast the salmon 10-15 minutes, or until the fish flakes easily when tested with a fork.
